White Chocolate Pumpkin Cheesecake Pudding

Cook Time: 0 minutes
Ingredients (2 servings)
- 1/4 cup all-natural white chocolate chips, such as Sunspire
- 2 Tbsp milk
- 1/4 cup pure pumpkin puree
- 1 Tbsp pure maple syrup
- 1/2 tsp pumpkin pie spice
- 1/2 cup whipped 1% cottage cheese, such as Friendship
- 2 oz neufchatel (1/3-less-fat) cream cheese, at room temperature
Instructions
Combine white chocolate chips and milk in a small heat-proof bowl; microwave on high for 40 seconds. Stir until chocolate is fully melted, heating in additional 10 second increments if needed.
In a mini food processor (or medium-sized mixing bowl) combine the remaining ingredients (pumpkin puree, maple syrup, spice, cottage cheese, and cream cheese). Puree (or beat with an electric mixer) the mixture until very smooth.
Add in the melted white chocolate mixture and puree (or beat) until very smooth, scraping down the sides of the bowl as necessary.
Pour into individual serving glasses and refrigerate until fully chilled.

234.8 calories, 11.3 grams fat, 4.7 grams saturated fat, 1.3 grams fiber, 18.5 grams sugars, 12.3 grams protein

Peter Walsh's Suggestions Where to "Donate, Sell & Trash"
I personally believe that there is a very real emotional connection between organizing your belongings, keeping your living space clutter free and a distinctly improved quality of life. By removing the excess "stuff" in your physical environment your mind, body and spirit will be calmer; you'll feel happier; and your ability "to do" or to accomplish will be given a giant boost of self confidence! Who doesn't want to be happier, calmer and more self confident? I honestly believe this, because I am also in that cycle of organizing my family's home space. After organizing, de-cluttering, bagging and boxing those things you no longer need - but that are in good enough condition to have a second life in someone else's home - you ask yourself: What do I do with them? As for me, I am a thrift store shopper, and donating our gently-used, no-longer-needed clothing, kitchenware, picture frames, toys, etc., to a local thrift store is my first choice. During my searching and planning work today I was very fortunate to discover two very special service organizations. The one that I want to share with you today is named Design Gives Back. Its founder and host is interior designer, Kelee Katillac.
Her mission over the past twenty years has been not only to design beautifully decorated, functional home spaces, but to use those designs to transform the lives of those that live in them with hope. She uses a technique that she pioneered called "Color Therapy" which promotes personal well-being through the use of color. Kelle began Design Gives Back (DGB) to do just that, give back to those who were in need. She uses her heart and her skills as a holistic designer to improve the lives of her new-found-friend's through personalized creative projects that help them visualize their special dream come true!
The following video is an inspiring example of Kellee Katillac's DGB - TLC for young Charlie Grady, who is a fighter recovering from brain tumor cancer and his brave and supportive family.

"Whoo" ate Their Fruit This Morning?
Don't you just love creative people! I really do, especially when it comes to those who are creative with what we eat. For myself, I feel it is a definite OK to let my creative side come out in my food preparation - I always have to fix meals to eat (eating is not optional) so why not add a creative touch to that fruit bowl! In my mind good food that is creatively presented shows those whom you made it for that they are Xtra special to you and it allowed you to have a lot of fun doing it! But that last part can be your little secret :)
